I may have shared this recipe before so if I did forgive me for the repeat; but it’s so good you’re going to want another slice anyway!
We made a couple of these for K’s graduation BBQ last month (along with a couple batches of chocolaty brownies) and I was just lucky that there was an extra piece to get a picture of; everyone seems to like this one around here.

Vanilla Pie
1 ready-made graham cracker crust (or make your own)
6 oz package vanilla baking chips
8 oz cream cheese, softened
8 oz sour cream
4 oz frozen whipped topping, thawed
cherry pie filling and whipped cream for topping (optional)
In a microwave safe bowl, melt vanilla chips; stir until smooth. Cool slightly.
In a large mixing bowl, beat cream cheese and sour cream until smooth.
Add melted chips; beat well. Fold in whipped topping.
Pour into crust. Cover and refrigerate for at least 2 hours.
Slice and serve.
Can top with a spoonful of cherry pie filling and whipped cream if desired.
