I don’t think Chicken a la King can get much easier than this… and soooo tasty!
Soup-er Chicken a la King
¼ cup butter
½ cup yellow bell pepper, small diced
1/3 cup onion, small diced
½ cup celery, thinly sliced (optional)
1 can cream of chicken soup
¾ cup milk
4 oz can sliced mushrooms, drained (optional)
¾ cup frozen peas
1 ½ to 2 cups cooked chicken, cubed
½ cup finely shredded cheddar cheese
small jar (2 oz) diced pimentos, undrained
salt and pepper
Your choice of hot cooked rice or egg noodles, fresh biscuits, or baked potatoes.
Melt butter in a large skillet over medium heat. Cook peppers, onions, and celery in butter until tender. Stir in soup, milk, mushrooms, and peas. Blend well. Add chicken, cheese, and pimentos. Stir and heat over low until cheese is melted and chicken is hot. Season to taste with salt and pepper. Serve over rice, noodles, biscuits, or baked potatoes.

Whatever happened to chicken a la king? It was once a standard on menus but it’s all but disappeared. I love it, especially on wintry days, along with pot pies. I’ll be coming back here this Winter for the recipe. Thanks for sharing.
