It’s Super Bowl Sunday! What kinds of tasty treats are you fixing at your house?
We cooked up these Saucy Dogs for lunch to kick things off around here. Yum!
With the chicken sausage, a side of mutigrain sweet potato tortilla chips, and tons of fresh veggies it was a pretty healthy lunch too.
4 chicken sausages with Monterey jack cheese and chipotle peppers
2 slices of bacon – chopped
½ tablespoon olive oil
1 clove garlic – minced
1 small onion – cut in half and thinly sliced
½ sweet red pepper – thinly sliced
½ sweet yellow pepper – thinly sliced
1 can petite diced tomatoes
½ to 1 teaspoon Italian seasoning blend
salt and pepper
4 hotdog buns
Cook chopped bacon in a large skillet until brown and crisp; and fat has rendered off. Remove all but 2 tablespoons of fat and add ½ tablespoon olive oil.
Stir in garlic, onion, and peppers. Sauté till veggies are tender crisp. Add tomatoes, herbs, salt, and pepper. Mix well and bring to a boil.
Place sausages into veggie mixture, reduce heat to low, cover and simmer 15 minutes or till sausages are hot.
To serve: place one sausage on each bun, top with veggie mixture and enjoy.
