Pork Chops With Tomato Gravy

Ok; so this one uses three pans for one dish but it’s worth it. These are some tasty chops! *note to self – make mashed potatoes next time.

Pork Chops With Tomato Gravy


1/4 cup butter

1 small onion – chopped

1/4 cup chopped green bell pepper

2 cloves minced garlic

2 1/2 tablespoons flour

1/4 cup milk

1 (14.5 oz) can diced tomatoes (Hunt’s spicy red pepper tomatoes work great here)

1 cup chicken broth

Melt butter in a medium size sauce pan; add onions, peppers, and garlic. Cook on medium heat for 2 minutes. Whisk in flour and cook 1 minute longer. Whisk in milk; add tomatoes and broth. Mix well. Simmer over medium-low heat for 10 minutes.


4 bone in pork chops

salt and pepper

3 tablespoons olive oil

Heat oil in a large skillet. Season chops with salt and pepper; brown 4 to 5 minutes on each side.

Put It All Together

Transfer chops to a baking dish and cover with gravy.

Bake at 375 for 15 to 20 minutes.
