Looking for a new sandwich for lunch? We made these the other day and they were pretty tasty. I used turkey bacon, swiss cheese, and whole wheat bread because that’s what we had in the fridge; but you can use your favorites or what-ever you have on hand. I’m thinking a thin slice of cheddar might be good too. I didn’t get the lettuce or mayo on this one before I took the picture but I’m guessing you know what that looks like. 😀
12 slices of your favorite type of bacon
2 medium onions; sliced thin
1 ripe tomato (your favorite variety) thinly sliced and seasoned with salt & pepper
4 slices of your favorite melting cheese
8 slices of your favorite sandwich bread
salt & pepper
crisp lettuce leaves (your favorite type)
mayo or your favorite sandwich dressing
In a large skillet cook bacon slices until crisp drain on paper towels.
Remove all but 2 tablespoons of the drippings and set aside.
Saute the onion slices in the bacon drippings until soft and lightly brown; about 5 min.
Use the reserved bacon drippings to grease a flat grill pan or another large skillet.
Warm the grill pan over medium to medium high heat.
Place 4 slices of bread on the grill pan and top each with 1slice of cheese, 3 slices of bacon, 1/4 of the caramelized onions, and sliced tomatoes.
Top each sandwich a second slice of bread and turn over with a large spatula.
Continue to cook, turning several times, until brown and crisp on both sides.
Remove from pan, open sandwiches and add the lettuce leaves and dressing.
Close up sandwiches cut in two and serve warm!
