Here’s a good one for your crock-pot! These came out pretty tasty and are so easy to make; I’ll have to make them again soon.
2 1/2 # beef – round steak, flank steak, or chuck steak sliced against the grain on an angle about 1/2″ thick
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large onion, cut in half and sliced
1 packet fajita seasonings
1/4 cup beef broth
or any toppings you like!
Place peppers and onions in the bottom of a 3 quart or larger slow-cooker.
Layer beef over peppers and onions.
Sprinkle beef with seasoning packet and pour broth over top.
Cover and cook on low for 8 hours.
Stir and serve on tortillas with toppings of your choosing.
